Season the Chicken: In a small bowl, whisk together the olive oil, minced garlic, thyme, rosemary, oregano, salt, and pepper. If using, add the lemon juice to this mixture.
Coat the Chicken: Rub the herb mixture all over the chicken breasts, ensuring they are evenly coated.
Place Chicken in Slow Cooker: Place the seasoned chicken breasts on top of the vegetables (if using) in the slow cooker. Arrange them in a single layer if possible.
Add Chicken Broth: Pour the chicken broth into the slow cooker around the chicken breasts.
Cook: Cover and cook on low for 3-4 hours or on high for 1.5-2 hours, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Cooking time may vary depending on the thickness of the chicken breasts and the model of your slow cooker.
Check for Doneness: Use a meat thermometer to check the internal temperature of the chicken. Insert the thermometer into the thickest part of the breast.
Shred or Slice (Optional): Once the chicken is cooked, you can shred it with two forks or slice it.
Serve: Serve the chicken with the juices from the slow cooker spooned over the top.
