Step 1: Prepare the Jalapeños
Preheat the Oven or Fryer: If you prefer baking, preheat your oven to 400°F (200°C). Alternatively, you can use a deep fryer for frying.
Prep the Jalapeños: Carefully cut each jalapeño in half lengthwise and remove the seeds. This helps eliminate some of the heat and makes room for the delicious filling.
Step 2: Make the Filling
In a large mixing bowl, combine 2 cups of cooked shredded chicken, ½ cup of buffalo sauce, and 4 oz of softened cream cheese. Stir until well blended and creamy.
Add 1 cup of shredded mozzarella cheese to the mixture. This will give your filling that ooey-gooey texture that everyone loves! Mix until the cheeses are evenly incorporated.
Step 3: Stuff the Jalapeños
Using a spoon, generously fill each halved jalapeño with the buffalo chicken mixture. Pack it in slightly to ensure each jalapeño is well-stuffed.
