Get Started: Preheat your oven to 350°F (175°C). Grease and lightly flour a 9×13 inch baking pan.
Make the Crust: In a large bowl, cream together the softened butter and sugar until light and fluffy. Add the flour and salt. Mix until the mixture resembles coarse crumbs.
Press the Crust: Press the crumb mixture evenly into the bottom of the prepared baking pan.
Bake the Crust: Bake the crust for 15-20 minutes, or until lightly golden brown.
Make the Filling: While the crust is baking, prepare the filling. In a large bowl, beat the softened cream cheese and sugar until smooth and creamy. Beat in the egg, lemon juice, and lemon zest until well combined.
Pour and Bake: Pour the cream cheese filling over the warm, pre-baked crust, spreading it evenly.
Bake the Bars: Return the pan to the oven and bake for another 20-25 minutes, or until the filling is set and the edges are lightly golden.
Cool and Chill: Let the bars cool completely in the pan on a wire rack. Once cooled, cover the pan and chill in the refrigerator for at least 2 hours before cutting.
Dust and Serve: Before serving, dust the bars generously with powdered sugar. Cut into squares and enjoy!
