Step 1: Prepare the Dough
Activate Yeast: In a large bowl, combine the warm milk and sugar. Sprinkle the yeast over the top and let it sit for about 5-10 minutes until it becomes frothy.
Mix Dry Ingredients: In another bowl, whisk together the flour, salt, ground cinnamon, and nutmeg.
Combine Ingredients: Once the yeast is activated, add the softened butter and eggs to the yeast mixture. Mix until well combined. Gradually add the dry ingredients, mixing until a dough forms.
Knead: Turn the dough out onto a lightly floured surface and knead for about 8-10 minutes until the dough is smooth and elastic. If you’re using a stand mixer, use the dough hook attachment for about 5-7 minutes.
Add the Fruits: Incorporate the currants (or raisins) and candied peel (if using) into the dough. Knead gently until evenly distributed.
Step 2: First Rise
Let It Rise: Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1-1.5 hours, or until it has doubled in size.
