Honey Curry Roasted Cauliflower with Grilled Halloumi and Crispy Chickpeas
Ingredients
For the Honey Curry Roasted Cauliflower:
1 large head of cauliflower, cut into florets
2 tablespoons olive oil
1 tablespoon curry powder
1 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper (optional, for heat)
Salt and freshly ground black pepper, to taste
2 tablespoons honey
For the Grilled Halloumi:
200 grams halloumi cheese, sliced
1 tablespoon olive oil
For the Crispy Chickpeas:
1 can (400 grams) chickpeas, rinsed and drained
1 tablespoon olive oil
1/2 teaspoon smoked paprika
Salt, to taste
For Garnish:
Fresh cilantro or parsley, chopped
Lemon wedges
