Greek Lemon Rice

Step 1: Sauté the Aromatics
In a medium saucepan, heat the olive oil over medium heat.
Add the finely chopped onion and sauté for about 3-4 minutes until softened and translucent.
Stir in the minced garlic and cook for another 30 seconds until fragrant, being careful not to let it burn.
Step 2: Toast the Rice
Add the long-grain rice to the saucepan and stir well to coat the rice with the oil and aromatics. Toast the rice for about 2-3 minutes until it becomes slightly translucent.
Step 3: Cook the Rice
Pour in the vegetable broth, along with the lemon zest and lemon juice. Stir to combine.
Increase the heat to bring the mixture to a boil. Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 15-20 minutes or until the rice is tender and has absorbed all the liquid. Avoid lifting the lid during cooking to ensure proper steaming.
