Step 1: Prepare the Potatoes
Boil the Potatoes: Place the red potatoes in a large pot and cover them with water. Bring to a boil and cook until fork-tender, about 15-20 minutes. Drain and cool.
Peel and Dice: Once the potatoes are cool enough to handle, peel them and dice them into bite-sized pieces.
Step 2: Chop the Vegetables
Finely chop the red onion, celery, and dill pickles (or, if using relish, measure it out). Also, chop the hard-boiled eggs into small pieces.
Step 3: Make the Dressing
In a mixing bowl, combine 1 cup mayonnaise with 1 tablespoon Dijon mustard.
Add salt and pepper according to your taste, whisking until smooth.
