Step 1: Preheat the Oven
Begin by preheating your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly to prepare for the batter.
Step 2: Mix the Dry Ingredients
In a large mixing bowl, combine 1 ½ cups of all-purpose flour, ¾ cup of granulated sugar, 1 ½ teaspoons of baking powder, and ½ teaspoon of salt. Whisk them together until well blended.
Step 3: Combine the Wet Ingredients
In another bowl, whisk together the ½ cup of melted unsalted butter, 2 large eggs, ½ cup of milk, 2 tablespoons of lemon juice, 1 tablespoon of lemon zest, and 1 teaspoon of vanilla extract. Make sure all ingredients are well incorporated.
Step 4: Combine Wet and Dry Mixtures
Pour the wet mixture into the dry ingredients. Gently fold the mixture using a spatula until just combined. Take care not to overmix; a few lumps are perfectly fine for fluffy muffins.
Step 5: Fill the Muffin Tin
Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full to allow room for rising.
