Get Started:
Preheat your oven to 375°F (190°C).
Grease a 6-cup muffin tin generously, or line it with paper liners. Greasing well is important for the crispy edges!
Make the Batter:
In a large mixing bowl, combine the diced ham and shredded cheddar cheese.
In a separate bowl, whisk together the eggs and milk until well combined.
Add the egg mixture to the ham and cheese mixture.
In another small bowl, whisk together the flour, baking powder, salt, and pepper.
Add the dry ingredients to the wet ingredients, and gently fold until just combined. Be careful not to overmix. A few lumps are okay.
If using, gently stir in the chopped chives or green onions.
Bake the Muffins:
Divide the batter evenly among the prepared muffin cups, filling each cup almost to the top.
Bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool slightly.
