Caramel Peanut Ritz Cracker Treats

Prepare the Crackers and Peanuts: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat. Arrange the Ritz crackers in a single layer on the prepared baking sheet. Sprinkle the chopped peanuts evenly over the crackers, pressing them lightly into the crackers.
Make the Caramel Sauce: In a medium saucepan, combine the butter, brown sugar, and milk. Cook over medium heat, stirring constantly, until the butter is melted and the sugar is dissolved.
Boil the Caramel: Once the mixture is smooth, bring it to a boil, stirring constantly. Continue to boil for 3 minutes, stirring constantly to prevent burning. The mixture will thicken slightly and become a rich caramel color.
Remove from Heat and Add Vanilla: Remove the saucepan from the heat and stir in the vanilla extract. Be careful, as the mixture may bubble up slightly when you add the vanilla.
Pour Caramel Over Crackers: Immediately pour the hot caramel sauce evenly over the crackers and peanuts, making sure to coat them as thoroughly as possible.
Bake: Place the baking sheet in the preheated oven and bake for 5-7 minutes, or until the caramel is bubbly and the crackers are lightly golden around the edges. Watch carefully to prevent burning.
Add Chocolate (Optional): If using chocolate chips, remove the baking sheet from the oven and immediately sprinkle the chocolate chips over the hot caramel. Let them sit for a minute or two to soften, then spread them evenly over the caramel with a spatula.
Cool and Break Apart: Let the treats cool completely on the baking sheet. Once cooled, break them into individual pieces.
Serve: Serve immediately and watch them disappear!
