Banana Bread Cookies

Preheat Oven: Preheat your oven to 350°F (175°C). Line a cookie sheet with parchment paper or a silicone baking mat.
Mash Banana: In a mixing bowl, mash the ripe banana until smooth. You should have about ½ cup of mashed banana.
Combine Wet Ingredients: Add the granulated sugar, melted butter, and vanilla extract to the mashed banana. Mix well until combined.
Combine Dry Ingredients: In a separate small bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg (if using).
Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
Add Optional Mix-Ins: If using, gently fold in the chocolate chips, chopped walnuts, or raisins.
Drop by Spoonfuls: Drop rounded tablespoons of dough onto the prepared cookie sheet, leaving about 2 inches between each cookie.
Flatten Cookies: Gently flatten each cookie with the back of a fork or spoon.
Bake: Bake for 8-10 minutes, or until the edges are lightly golden and the centers are set.
Cool: Let the cookies cool on the cookie sheet for a few minutes before transferring them to a wire rack to cool completely.
