Ingredients:
For the Cookies:
1/2 cup (113g) unsalted butter, softened
1/2 cup (100g) granulated sugar
1/2 cup (100g) packed light brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/2 cups (192g) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger (optional)
1 cup (113g) shredded carrots, packed
1/2 cup (57g) chopped walnuts or pecans (optional)
1/2 cup (85g) raisins (optional)
For the Cream Cheese Frosting:

4 ounces (113g) cream cheese, softened
1/4 cup (57g) unsalted butter, softened
2 cups (240g) powdered sugar
1 teaspoon vanilla extract
1-2 tablespoons milk or cream (to adjust consistency)
