Step 1: Prepare the Roasted Veggies
Preheat Your Oven: Set your oven to 400°F (200°C).
Toss the Veggies: In a bowl, combine the zucchini, yellow squash, bell peppers, and broccoli. Drizzle with olive oil, and season with salt and pepper. Toss everything until the vegetables are evenly coated.
Roast the Veggies: Spread the seasoned vegetables on a baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes, or until they are tender and slightly caramelized, tossing halfway through.
Step 2: Cook the Ground Turkey
Heat the Olive Oil: In a large skillet, heat 1 tablespoon of olive oil over medium heat.
Add the Turkey: Once the oil is hot, add the ground turkey (or chicken) to the skillet. Break it apart with a spatula as it cooks.
Season: Sprinkle in the salt, black pepper, garlic powder, onion powder, and soy sauce. If you like a bit of spice, add the optional chili flakes. Stir well to combine.
Cook Thoroughly: Add the chopped mushrooms and diced onions to the skillet. Continue to cook until the turkey is no longer pink and the onions are translucent (about 8-10 minutes).
