Step 1: Marinate the Chicken
In a large bowl, combine buttermilk and Louisiana hot sauce. Whisk until well blended.
Submerge the chicken pieces in the buttermilk mixture, ensuring they are fully coated. Cover and refrigerate for a minimum of 4 hours, ideally overnight. This step helps tenderize the chicken and infuses it with flavor.
Step 2: Prepare the Seasoned Flour Coating
In a large shallow dish or bowl, combine the all-purpose flour, smoked paprika, garlic powder, onion powder, cayenne pepper, white pepper, black pepper, and kosher salt. Mix well to ensure even distribution of the spices.
Step 3: Dredge the Chicken
Remove the marinated chicken from the refrigerator, shaking off excess buttermilk.
Dredge each piece thoroughly in the seasoned flour mixture, pressing gently to ensure an even coating. Shake off any excess flour and set aside on a wire rack. Allow it to rest for about 10-15 minutes to help the coating adhere better during frying.
