Add Sugar and Oil: Gradually mix in 105 grams of granulated sugar and 1 cup of vegetable oil, beating until well combined and slightly fluffy.
Incorporate Milk and Flavors: Add 1 cup of milk, a pinch of salt, 2 teaspoons of vanilla extract, and 1 tablespoon of lemon juice (or white vinegar) to the egg mixture. Mix until smooth.
Step 3: Combine Dry Ingredients
In a separate bowl, whisk together 1 1/2 cups of all-purpose flour, 12 grams of baking powder, and a pinch of salt.
Gradually add the dry ingredients to the wet mixture, mixing gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.
Step 4: Fold in the Apples
Gently fold in 1 cup of peeled and chopped apples, ensuring they are evenly distributed within the batter.
Step 5: Fill the Pan
Using a spoon or a small scoop, fill each cup of the prepared mini cupcake or muffin pan about two-thirds full with the apple batter. This allows room for the cakes to rise.
