Preheat Oven: Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners, or grease the muffin tin well.
Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
Combine Wet Ingredients: In a separate mixing bowl, whisk together the buttermilk, milk, eggs, vegetable oil (or melted butter), and maple syrup.
Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix; a few lumps are okay.
Add Sausage and Cheese (Optional): Gently fold in the cooked sausage crumbles and shredded cheddar cheese (if using).
Fill Muffin Cups: Fill each muffin cup about 2/3 full with the batter.
Bake: Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Cool: Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
