Lemon Poundcake Cookies

Step 1: Prepare the Cookie Dough
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats to prevent sticking.
In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
Add the eggs, one at a time, mixing well after each addition. Then, stir in the vanilla extract and lemon zest until fully combined.
Step 2: Combine Dry Ingredients
In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Be careful not to overmix, as this can affect the texture of the cookies.
Step 3: Shape the Cookies
Using a tablespoon or cookie scoop, drop heaping tablespoons of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart. The dough may be slightly sticky, so wetting your hands can help shape the cookies.
