Step 1: Prepare the Crust
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine red velvet cake crumbs and melted butter. Mix until the crumbs are saturated and resemble wet sand.
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust.
Bake the crust in the preheated oven for 10 minutes. Remove and let it cool while preparing the filling.
Step 2: Make the Cheesecake Filling
In a large bowl, beat the softened cream cheese with a hand mixer until smooth and creamy.
Add in the ¾ cup of sugar and mix until well combined.
Incorporate the eggs, one at a time, blending well after each addition.
Stir in the chopped strawberries and vanilla extract until just combined, being careful not to overmix.
