Garlic Butter Steak Bites

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta shells and cook according to package directions until al dente. Reserve about ¼ cup of the pasta water before draining. Drain the pasta in a colander and set aside.
Prepare the Steak Bites: While the pasta is cooking, prepare the steak bites. Pat the steak pieces dry with paper towels. This helps them sear better. Season the steak bites generously with salt and pepper.
Sear the Steak: In a large skillet (cast iron is ideal) over medium-high heat, melt 2 tablespoons of butter and add the olive oil. Once the butter is melted and the skillet is hot, add the steak bites in a single layer (work in batches if necessary to avoid overcrowding the pan).
Cook the Steak: Sear the steak bites for 2-3 minutes per side, until browned and cooked to your desired level of doneness. For medium-rare, aim for an internal temperature of 130-135°F. Remove the steak bites from the skillet and set aside.
Make the Garlic Butter Sauce: Reduce the heat to medium. Add the remaining 1 tablespoon of butter to the skillet. Once melted, add the minced garlic and cook for about 30 seconds, until fragrant, being careful not to burn it.
Add Worcestershire Sauce and Seasoning: Stir in the Worcestershire sauce, Italian seasoning, and smoked paprika. Cook for another 30 seconds, stirring constantly.
