French Onion Meatloaf

1. Preheat the Oven
Begin by preheating your oven to 375°F (190°C). This step is crucial for cooking your meatloaf evenly.
2. Caramelize the Onions
In a large skillet, melt 2 tablespoons of butter with 1 tablespoon of olive oil over medium heat.
Add the thinly sliced onions and cook for about 20-25 minutes, stirring occasionally, until the onions turn a beautiful golden brown. This slow cooking allows the natural sugars in the onions to caramelize, enhancing their flavor.
3. Add the Broth
Pour in the 1 cup of beef broth and let it simmer until reduced by half. This will create a rich flavor base.
Once reduced, remove from heat and allow the onions to cool slightly.
4. Prepare the Meatloaf Mixture
In a large mixing bowl, combine:
2 lbs of ground beef
1/2 cup breadcrumbs
1/2 cup grated Gruyere cheese
2 eggs
2 cloves of minced garlic
