Cinnamon Sugar Cheesecake Donut Cookies

1️⃣ Make the Dough & Filling:
Prepare the Cookie Dough: In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture is smooth and creamy. Next, add in the eggs and vanilla extract and continue to mix until well combined.

Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually incorporate the dry ingredients into the butter mixture until a soft dough forms.

Prepare the Cheesecake Filling: In another bowl, beat the softened cream cheese with granulated sugar and vanilla extract until the mixture is creamy and smooth, ensuring there are no lumps.

2️⃣ Assemble the Cookies:
Form the Cookies: Take portions of the cookie dough and flatten them into discs. Place a spoonful of the cheesecake filling in the center of one disc, then cover with another disc of dough. Press the edges together to seal, creating a lovely little pocket filled with cheesecake goodness.
3️⃣ Bake & Cool:
Baking Time: Preheat your oven to 350°F (175°C). Arrange the filled cookies on a lined baking sheet, spacing them apart. Bake for 12-15 minutes or until they turn a beautiful golden brown. Once done, allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
