1. In a bowl, combine graham cracker crumbs, melted butter, and brown sugar. Press half the mixture into the bottom of a glass dish to form a crust layer.
2. In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped topping. Spread half of this mixture over the crust.
3. Layer with fresh fruit, then sprinkle some of the crumb mixture.
4. Repeat the cream layer, fruit, and crumbs until dish is filled.
5. Chill in the refrigerator for at least 1 hour before serving.
6. Optional: drizzle with caramel just before serving for extra indulgence.
