Berry Crumble Cheesecake

Step 1: Prepare the Biscuit Base
Preheat the oven to 180°C (350°F).
In a mixing bowl, combine the crushed digestive biscuits and sugar. Pour in the melted butter and mix until the crumbs are evenly coated.
Press the mixture firmly into the bottom of a springform pan to create an even base. Bake in the preheated oven for 10 minutes, then remove and let it cool.
Step 2: Make the Berry Layer
If using frozen berries, thaw and drain any excess liquid.
Gently mix the mixed berries in a bowl, and set aside to prepare for layering later.
Step 3: Prepare the Cheesecake Filling
In a large mixing bowl, beat the softened cream cheese (or mascarpone) with an electric mixer until smooth and creamy.
Add the sugar, vanilla extract, lemon zest, lemon juice, and egg. Mix until well combined.
Gradually add the double cream and plain flour, mixing until the batter is smooth and creamy.
