This recipe uses a cake mix as a starting point to create super moist and
flavorful cupcakes.
Ingredients:
1 box (15.25 oz) white cake mix (not angel food)
1 package (3.4 oz – 3.5 oz) instant vanilla pudding mix (dry, not prepared)
4 large eggs
¾ cup vegetable oil (or canola oil)
½ cup milk
1 cup sour cream (full-fat or low-fat)
For the Classic Vanilla Buttercream Frosting:
1 cup (2 sticks) unsalted butter, softened
3-4 cups powdered sugar, sifted
¼ cup milk or heavy cream
1 teaspoon vanilla extract
Pinch of salt (optional, but enhances the flavors)
For the Cream Cheese Frosting:
8 oz cream cheese, softened
½ cup (1 stick) unsalted butter, softened
3-4 cups powdered sugar, sifted
1 teaspoon vanilla extract
