These buttery, melt-in-your-mouth shortbread cookies are studded with sweet
maraschino cherries and creamy white chocolate chips.
Ingredients:
1 cup (2 sticks) unsalted butter, softened to room temperature
½ cup powdered sugar, plus more for dusting (about ¼ cup)
1 teaspoon pure vanilla extract
¼ teaspoon almond extract (optional, enhances the cherry flavor)
2 cups all-purpose flour
¼ teaspoon salt
½ cup chopped maraschino cherries, drained well and patted very dry (ensure they are thoroughly dry to prevent bleeding)
1 cup high-quality white chocolate chips or chopped white chocolate
Optional: Red food coloring (gel, for a slight pink hue – use sparingly)
Optional: Sanding sugar or coarse sugar (for decorating)
